Example of a three course dinner:

  • Cylinder of smoked mushrooms and goat cheese on a carpaccio of zucchini, dates,
    Valerian leaf salad with pistachios and orange-mustard dressing
  • Fried sea bream with half sundried tomatoes, caper apples and a turmeric and oregano cream sauce
  • Petit grand dessert (mousse, pastry, fruit coulis, fresh fruits and Ci Vediamo ice-cream)

 

Example of a four course dinner:

  • Spinach salad with gorgonzola croutons, Parma ham rosettes, pine nuts and rosemary mustard dressing.
  • Apricot-mustard soup with shiitake and cress
  • Lightly (home) smoked chuck tender together with a gravy with truffle, red wine and thyme
  • Panna cotta with vanilla and orange, fresh fruits and chocolate curls

Example of five course dinner:

  • Frisee salad with tartare of tuna with cucumber, seaweed crisps and ginger wasabi dressing
  • Saint-Jacques shells with Dutch shrimps, small crayfish on wakame with salmon trout roe and a dragon and saffron beurre blanc sauce
  • Roasted duck breast with tangerine-pepper gravy
  • Cheese, grapes, Italian crackers, walnuts and mango chutney
  • White chocolate mousse with brownie, caramel Ci  Vediamo caramel sea-salt ice-cream and pomegranate

Example of five course dinner:
